Tong Xin is a stall in East Coast Lagoon specialising in stir fried dishes like Hokkien prawn mee, fried kway teow and fried oyster, otherwise known as orh luak. In stores like this, you’ll usually see two variants of the oyster omelette, the normal egg version known as orh jian, or the special dough mix egg version orh luak. If you’ve never tried it before, go for the orh luak to have a unique experience.
The store was manned by two people, with the lady being efficient at taking orders whilst the guy stayed at the back cooking multiple dishes at the same time.
The fried oyster was prepared in a large flat wok, spread out so that it could be evenly cooked throughout and cooked in batches of multiple orders together. We realised after reaching the front that you’d get an electronic counter after placing an order and you’d have to wait again before it’s your turn to get the food.
Fried Oyster ($6)
The orh luak came with a nice doughy egg mix, with the colours being both yellow and brownish. The oysters were thrown on top together with a healthy serving of parsley as a topping.

The orh luak had a soft and slightly gooey texture giving off a starchy taste to the mixture. The oysters in the dish were slightly fried and could have been cooked a little longer to let the taste soak in.
The taste of orh luak was savoury and slightly salty, with the starchiness being a plus point to the mouthfeel. The only drawback was that the oysters were a little disappointing and lacklustre, falling flat on the taste and freshness.
Tong Xin (同心)
If you don’t mind waiting for the long queue, Tong Xin fried oysters were actually not bad for the egg mix though the oysters did seem to be a little lacking. Compared to the other fried oysters available at East Coast Lagoon Food Village, we preferred Tong Xin’s version for the general feel of the whole dish.
