
Saute Sushi is Singapore’s first plant-based sushi train restaurant specialising in vegetarian and vegan sushi. Located at Paya Lebar Square, it is easily accessible with it being just a short walk away from Paya Lebar MRT.
The interior is decked out with Japanese decor, with a Saute Sushi Train at the front of the row of seats, emulating a train with the customers appearing to be passengers on the train.
Sushi Train
Being a great way for families to enjoy a meal together, the sushi train concept proves to help keep children entertained whilst also allowing a unique dining experience. Being able to enjoy your food without interruption as all the interaction you need is just ordering your food online and receiving the food by the train.
Chawanmushi ($3.90++)
The texture of chawanmushi was smooth and silky, with a slightly firm texture from the steamed egg custard. It was garnished with mushrooms, carrot, ginkgo nuts which added a subtle flavor and texture to the custard. For a vegetarian chawanmushi, the taste and texture were great even without the usual seafood or chicken broth that usually helps to accent the savoury taste.
Truffle Chawanmushi ($5.70++)
The truffle chawanmushi was the luxurious variation of the chawanmushi. It had shavings of truffle added to the egg custard mixture. The aroma of the truffle was the first to hit with a strong fragrance in the air when we opened the lid. The truffle added a distinct earthy and musky aroma that blended well and made it a nice and comforting dish.
Vegetable and Shroom Tempura ($10.90++)
The vegetable and shroom tempura consisted of various vegetables and mushrooms coated in a light, crispy batter and deep-fried until golden brown. The ingredients used in this dish were pumpkin, enoki mushroom, ladies finger, mushroom and seaweed.
The dish was savoury and slightly sweet, with a subtle umami flavor from the mushrooms. The texture of the tempura was crispy on the outside while most of the ingredients were still soft and chewy on the inside, giving it a satisfying mouthfeel. As vegetable tempura was a vegetarian dish to begin with, it was a great dish to start the meal with.
Abi Avocado ($12.90++)
The abi avocado maki roll was interesting with the avocado pairing well together with the mock abi (ebi). The slightly sweet taste from the avocado complemented the light savoury flavour of the mock abi. With a light but savoury tasting mock abi, the dish was a pass with the focus being more on the avocado leaving you with a satisfying mouthfeel.
Golden Tempura Cheeeezy ($12.90++)
The golden tempura cheezy maki roll was a unique sushi roll that was crispy and creamy with every bite. The tempura bits provided a really satisfying crunch that contrasted with the rich and savoury cheese cube within. The maki roll was more of a pleasant surprise for those who crave a fusion of strong flavours and textures in their sushi.
Inari Set ($8++)
The inari set came with three different types of inari, the corn inari, wakame inari and original inari. The tofu skin was soft and chewy, providing a nice mouthfeel that went well with the rice. The light sweetness of the tofu went well with wakame and corn, blending differently with both of them to create different taste combinations.
The corn inari was towards the sweeter side as the sweetness of the inari was enhanced with the sweetness of the corn. The wakame inari had a very light sweet and savoury combination that was punctuated by the sesame seeds sprinkled over it as well. Providing two different taste profiles with just one base inari sushi.
White Zalmon ($2.30++)
The white zalmon (salmon) was ordered as we wanted to try and see how the mock seafood was like. While the white zalmon looked unassuming, it tasted even more underwhelming with not much taste or flavour to it. The main taste that stood out was the sushi rice and even the texture was a light gelatine texture that did nothing to wow or amaze us.

Saute Sushi
Good vegetarian or vegan sushi is not easy to find and Saute Sushi was a place where you can enjoy the sushi. Whilst you might not want to expect too much about the mock seafood dishes, the vegetarian dishes and sushi were great to have. The accent of the dishes were pushed to focus on the ingredients that were plant based and those were great to have.
If you’re looking for vegetarian cuisine in the area near Paya Lebar or to accommodate a vegetarian friend, look no further. Saute Sushi would be more than enough to satisfy non-vegetarians with the quality of the non-mock seafood dishes here.
