
Enishi is a Japanese restaurant located in International Plaza near Tanjong Pagar specialising in dan dan noodles and Japanese dashi soup. They have a commitment of selling till the soup runs out, with a capacity of approximately 100 bowls a day. Being a small and quaint restaurant, it’s only able to approximately 10 pax at a time.

Dan Dan Noodles ($19.80)
We ordered Enishi’s dan dan noodles to try and it came as a set with a half cooked egg that you may throw into your noodles as well. The noodles themselves were very different from your usual ramen noodles, they were flat and thick, similar to the shape of ban mian.
The noodles were perfectly cooked, with the flavours of the dish sticking to it nicely with a gentle chewiness to it. The noodles were topped with a delicious mixture of fried onions, pickles, radish and flavourful minced meat.

After mixing the half cooked egg in, the noodles looked well mixed with a very even distribution of ingredients. The taste was ever changing, with the vegetables adding a crunchy, fresh burst of flavour to the dish.
The pickles added a light fermented and tangy flavour whilst the minced meat provided a savoury taste. The egg helped to mellow the taste and keep the ingredients sticking to the noodles and the fried onions added a crunch to the dish.

Japanese Shoyu Dashi Noodles – Regular ($19.80)
With the shoyu regular ramen, the ramen came nicely layered. The dark, rich broth was punctuated by plump slices of char siu, a perfectly cooked ramen egg, and tender duck slices. The fresh vegetables and naruto were the final touch, topping the dish nicely.
The blend of flavours in the broth was amazing; the broth was savoury, the char siu was sweet, and the duck was succulent. The noodles were a little similar to the dan dan noodles used, not too soft or too hard, and held up well in the broth. It was a very different texture from the usual ramen noodles and was an interesting experience.

We ordered sake to go together with the ramen and dan dan noodles, and were fortunate to be served in a sake server set. By pouring the cold Sake into the sake server to the brim, it overflows into the ochoko. By exposing the sake to the air, the aroma opens up, making the sake even better. The sake was smooth and light, pairing really well with the noodles served.

Overall, Enishi was a surprise experience for us, with the noodles used and the flavours being different from the usual ramen styles. The experience was pleasant, with the blend of flavours being a welcome taste that stood out after trying many different types of ramen. The ingredients truly blended well to form a well rounded and amazing mouthfeel and taste that lingered in the mouth.
While Tanjong Pagar has many ramen choices, if you’re on the lookout for something different, do head down as the Enishi experience is sure to give you something to remember. The unique flavours is something that we would recommend coming to try or even paying a return visit for.
